They’re made up of healthy ingredients like yogurt and fruits, but they’re also refreshing and delicious with each bite. And because we love to spoil you, we’ve got you a recipe that adds some delicious chocolate into the mix, while still being healthy, since it’s dark chocolate we’re talking about. Read on for a recipe of berry yogurt parfait with Bournville dark chocolate chunks.
Each bite promises to be creamy, slightly tart, deeply chocolatey and have a slight crunch for more texture. The richness of the dark chocolate is a great way of balancing out the density of the berries and the tang of the yogurt. Not only does it taste great, but it also looks fancy and fun. So here’s everything you need to make it yourself:
Ingredients (Serves 2)
- 1 cup Greek yogurt (plain or lightly sweetened)
- 1 tsp vanilla extract
- 2 tbsp honey or maple syrup (optional, depending on your taste)
- ½ cup fresh mixed berries (strawberries, raspberries, blueberries, blackberries)
- ¼ cup granola (store-bought or homemade with oats and nuts)
- 40 g Bournville dark chocolate, chopped into rough chunks
- A few mint leaves, for garnish
Method:
- Start by roughly chopping your Bournville chocolate into uneven, jagged pieces. But not too fine you want it to have a bite. Those little chunks taste great in bits. This will be one of the layers but also set some aside for the topping.
- In a bowl, stir the Greek yogurt with vanilla extract and honey or maple syrup. The vanilla adds warmth and depth, while the sweetener balances the yogurt’s tang. The texture should be silky and even.
- Bring out your serving glasses or bowls and start layering. First, add two tablespoons of the yogurt mixed at the bottom of each glass. Smooth it out with the back of a spoon so it's mostly even. Now sprinkle in a spoonful of granola for crunch. Next, layer a mix of berries on top. Now add a generous sprinkle of the chopped Bournville. The contrast of its bold, bittersweet richness between the tart fruit and cool yogurt is refreshing and exciting. If your glass has more space, do another round of yogurt, granola, berries, and chocolate chunks. End with a dollop of yogurt and a final flourish of Bournville on top. Place a mint sprig atop the final layer.
Tips:
- Use cold ingredients: This makes every bite refreshing and firm, especially with the richness of dark chocolate. The yogurt especially should be cold since that helps hold its structure and it won’t run everywhere under the weight of the other ingredients.
- The granola is vital because it breaks up the softness and adds crunch to every bite. If you don't have granola or don't want to use it, use chopped nuts like almonds, pistachios and more instead.
- Optionally, you can refrigerate the parfait for 30 minutes before serving, if you like your parfait slightly set. But it’s also fun to eat right away, when it's soft and fresh.
- If you want your parfait to be more chocolatey, melt some of the Bournville and mix that into the yogurt before layering. To mix chocolate, there are two methods. One is to microwave it. Place some chopped Bournville in a microwave safe bowl and place it in the machine for 15 seconds. Then stop, bring it out and give it a good mix. Scrape any chocolate that might have stuck to the bottom or that will burn. Once you’ve stirred it, place it back in the microwave for another 15 seconds. Keep going in this way, in 15 second bursts and stirring in between, till it is completely melted. The other option is to melt it with a double boiler. Place a bowl filled with water on the stove on medium heat. Place the chocolate in a small bowl and position that bowl over the water. It will slowly melt through. Then let it cool down just a little bit and then mix it into the yogurt.
