Bournville Mango Chocolate Parfait: A No-Bake Summer Treat

There’s something quietly luxurious about eating dessert from a glass, especially when it’s stacked in jewel-toned layers of fresh mango, rich dark chocolate, and creamy vanilla yoghurt. This parfait isn’t trying to be fancy – it just is. It’s the kind of treat you throw together on a warm afternoon when your cravings are part within your calorie count, part indulgence. The Bournville dark chocolate adds a nice edge of bitterness that cuts through the sweetness of ripe mango and raisins, while the oats and yoghurt keep things wholesome and healthy. It’s dessert that doesn’t make you ask for forgiveness to the diet Gods and we are here for it!

Bournville Mango Chocolate Parfait

(Serves 1)

Ingredients:

  • ½ of a mango, diced
  • 150 gm Cadbury Bournville Dark Chocolate
  • 150 gm vanilla yoghurt
  • 1/2 cup of oats
  • A handful of raisins

Instructions:

  1. Pick a ripe but firm mango. Cut one side of the mango and store the rest for something else. Peel the mango and dice it into small cubes.
  2. Break the Bournville dark chocolate into bits or roughly chop them up. Set aside. Note: You can use any kind of chocolate for this recipe, be it milk or white chocolate too, but dark chocolate is perfect because of its health benefits and also its bitterness, plus the recipe calls for sweet mangoes which will balance it out nicely.
  3. Take a dessert tumbler, and start layering the parfait ingredients as you like. But, preferably, start with the vanilla yoghurt then follow with oats and raisins.
  4. Add another layer of yoghurt then the mango and then the dark chocolate. Next, add the final layer of yoghurt and garnish with some oats and raisins.
  5. Once the parfait is at the brim, and all the ingredients are incorporated, serve.

Note:

  • Make sure the yoghurt that you choose to use is thick. Runny yoghurt will not stay in place and ruin the layers and will not look as appealing, avoid curd which tends to be on the thinner side.
  • If you want to make this recipe even healthier, you can swap vanilla yogurt with plain yogurt or greek yogurt.
  • You can also swap the mangoes with berries or any sweet non-acidic fruits such as peaches, apricots or oranges.
  • The oats and the roughly chopped dark chocolate complement each other, both being nutrient rich and also being contrasting in texture.
  • The mango also goes quite well with the raisins and their sweetness is complimented perfectly by the creaminess of the yoghurt.
  • If you have time, lightly toast the oats in a dry pan for 2–3 minutes before layering. This brings out a nutty flavor and makes them slightly crisp, which holds up better in the yoghurt and adds a subtle crunch.
  • For the chocolate, don’t just toss in large chunks—try shaving or grating a small portion for one of the middle layers. It melts slightly into the yoghurt and adds a silky texture and a more even distribution of flavor.

Parfait Crunch Topping Recipe

If you want to turn this simple parfait into something extra special – maybe for a dinner party or just because it’s Tuesday and the work “ugh!” hits you – top it off with a quick, crunchy crumble, which takes less than 5 minutes to whip up.

Ingredients for the Crunch Topping:

  • 1 tbsp butter
  • 2 tbsp oats
  • 1 tbsp chopped almonds or walnuts
  • 1 tsp honey
  • A pinch of cinnamon

Instructions:

  1. In a small nonstick pan, melt the butter on low heat, swivelling it around if needed.
  2. Then add the oats and nuts and stir until they begin to toast well and release a nutty aroma, which might take around 2-3 minutes. Switch off the flame.
  3. Drizzle the honey into the pan, and add a tiny pinch of cinnamon and stir quickly until the mixture becomes golden and clumpy.
  4. Let this mixture cool for a minute or two for it to be cohesive and also crisp up.
  5. Crumble this mixture over the top of your finished parfait right before serving.
