Ingredients:

Dry:

  • ½ cup all-purpose flour (or whole wheat flour for extra wholesomeness)
  • ½ cup unsweetened cocoa powder
  • ¼ tsp salt
  • ½ tsp baking powder

Wet:

  • 2 medium ripe bananas, mashed
  • ½ cup brown sugar (or jaggery powder for a healthier twist)
  • ¼ cup vegetable oil or melted butter
  • 1 tsp vanilla extract
  • 1 large egg (or flax egg for eggless version)

Garnishes:

  • ½ cup chocolate chips
  • ¼ cup chopped walnuts or almonds

Method:

Step 1: Preheat & Prep

Preheat the oven to 175°C (350°F). Preheating will help the brownies bake evenly and quickly. Line an 8x8 inch baking pan with parchment paper or lightly grease it with some butter.

Step 2: Mix Dry Ingredients

Take a large mixing bowl and whisk together flour, cocoa powder, salt, and baking powder. Set aside. Combining dry ingredients before adding wet ingredients is crucial to make a homogenous batter. If you want a smooth texture, you can sift the dry ingredients together to remove lumps.

Step 3: Mix Wet Ingredients

Take another large bowl and mash the bananas until smooth. Add in brown sugar, oil, vanilla extract, and egg. Whisk well until combined.

Step 4: Combine

Gradually fold the dry mixture into the wet mixture. Be careful to not overmix or else the batter will be airy and the brownies will turn out dry and hard. Fold in chocolate chips or nuts, if using. Take out the brownie tin and keep it at room temperature for a few minutes. Let it cool completely before slicing into squares. Do not slice the brownies right away or else the structure will get destroyed and brownies will turn into a gooey scrambled mess. Serve right away or store in an airtight container for up to 3 days.
