Simple Recipe For White Chocolate Pretzels With Almond Flakes
Ingredients:
- 2 cups mini pretzels (salted or unsalted)
- 200 g white chocolate (chopped or chips)
- ½ cup roasted almonds
- 1 tbsp butter or coconut oil
- A pinch of sea salt
Method
- Chop white chocolate into pieces and place in a heatproof bowl. Add some butter or coconut oil to it. Heat some water in a saucepan until it starts to simmer and produce vapours, then place the chocolate bowl over it. Let the rising steam settle at the bottom of the bowl, and its heat will naturally melt the chocolate. Keep stirring to avoid lumps and make the chocolate smooth.
- Dip each of the pretzels into the melted chocolate, or you can also toss them in the chocolate to coat fully. Shake off the excess chocolate and place on a parchment paper lined tray. Keep distance between the pretzels or they will stick to each other.
- After dipping pretzels in chocolate, immediately sprinkle roasted almonds over them while the chocolate is still wet so that the almonds can stick to it well. As the chocolate sets, the almonds will remain stuck and not fall off. For extra flavor, you can also add a light dusting of sea salt flakes. This will give a contrasting highlight. To give it a little more decoration, you can drizzle some melted dark chocolate or milk chocolate too.
- Refrigerate the pretzels until the chocolate is set for about 20 to 30 minutes. Chocolate can also harden at room temperature, but freezing makes the process quicker. Once frozen, store the pretzels in an airtight container in the fridge for up to a week.
Tips for No-Fail Crunch:
Use good-quality white chocolate.
For this recipe or any recipe that uses chocolate coating, always choose couverture or baking chocolate. These chocolate varieties don’t crack when frozen.
Don’t overheat chocolate.
Overheating can make the chocolate seize. Instead, melt it slowly and stir often. If you don’t have much experience with microwaves, melt it using the double-boiler method over the stovetop.
Roast almonds lightly for maximum crunch and aroma.
Almonds can burn easily when roasted on a high flame. Therefore, you have to be careful when roasting and stop when you get a roasted nutty aroma.
