Silk Fig Walnut Fudge: Festive Sweet With Vegan Adaptations

Easy Recipe For Silk Fig Walnut Fudge:
Ingredients
- 1 cup dried figs
- ½ cup walnuts
- 200g Cadbury Dairy Milk Silk chocolate
- ½ cup condensed milk
- 1 tbsp ghee or unsalted butter
- ¼ tsp cardamom powder
- Pinch of salt
- Extra walnuts and fig bits
Method:
Step 1: Prepare Figs
Take dried figs and chop them into small pieces with a sharp knife. Soak them in warm water for 10 to 15 minutes until it softens. Drain it off completely and place on a paper towel to soak up the moisture. Set aside.
Step 2: Toast Walnuts
Heat up a pan until it is dry and roast walnuts in it for about 2 to 3 minutes until they turn aromatic. Let walnuts cool off after roasting then chop it coarsely. Set aside.
Step 3: Melt Chocolate
Prepare a double boiler by heating up water in a pan. Put the chopped Cadbury Dairy Milk Silk chocolate in a heat safe bowl. Place the bowl over the pan so the rising steam settles at the bottom of the bowl. Keep the bowl away from the water. Let the heat from steam melt chocolate slowly. Stir to dissolve the lumps. Take it off the heat once chocolate is melted.
Step 4: Mix Condensed Milk & Ghee
Heat ghee in a separate pan. You can also use butter for a milder flavor. Add condensed milk to it and stir until dissolved and blended. You just have to warm it a little bit at first.
Step 5: Combine Chocolate & Milk Mixture
Now pour the melted chocolate into the warm condensed milk mixture. Mix it well to make a uniform base. The base would look glossy and thick.
Step 6: Add Figs, Walnuts & Cardamom
Now add soaked figs, toasted walnuts, cardamom powder for fragrant flavor, and a pinch of salt to balance the sweetness and enhance the flavor of chocolate. Stir it well until everything is combined and well distributed.
Step 7: Set the Fudge
Pour the fudge mixture into a greased tray or a parchment lined baking sheet. Flatten it using a silicone spatula until it covers all the sides of the sheet. It should be as thick as a mithai.
Step 8: Garnish & Chill
Garnish it with extra fig pieces and a few crumbs of walnut on top. Add chocolate shavings if you want a richer flavor. Press down the garnishes a bit to secure them. Freeze the fudge for 2 to 3 hours until it is firm. Once it is set, cut it into squares with a sharp knife and serve.
Vegan Adaptations For Silk Fig Walnut Fudge:
1. Replace Dairy Milk Silk Chocolate:
To make the fudge vegan, you can opt for dairy-free dark chocolate or vegan chocolate chips in the place of Cadbury Dairy Milk Silk chocolate. Make sure it is 50-70% cocoa and without any milk solids.
2. Replace Condensed Milk:
For the vegan version, you can replace condensed milk with coconut or oat milk based condensed milk. If it is not available at the stores, you can make it at home by reducing the plant-based milk with sugar.
3. Replace Ghee or Butter:
Ghee and butter are both dairy based, therefore to make vegan versions you can use plant based substitutes like coconut oil.
