Oreo Caramel Granola Bars with No-Bake Crunch

As the name says, it is made with granola as the main ingredient which is actually a mixture of many ingredients like roasted oats, nuts, seeds, and sweeteners. In a way, you might feel like it is just muesli which also is a mixture of rolled oats, cereals, nuts and seeds, but the main difference between granola and muesli is how they are prepared and served. Muesli is the raw and untoasted version where oats, and other ingredients are just mixed without any added flavor and sweeteners. This makes muesli much softer in texture and is often served soaked in milk or yogurt. On the other hand, granola is the baked version of it where oats and nuts are roasted and then combined with sweeteners later on which makes it crunchy and clumpy. Since granola is roasted, it is more satisfying than muesli and has a deeper flavor.

This recipe for Oreo caramel granola bars takes the traditional granola bars to a whole new level by introducing the richness of chocolate, the crunch of cookies, and the warmth of caramel sauce. By combining Oreo cookies, caramel, and chocolate in your traditional granola bar base, you can uplift the flavor and make the bars taste more like a dessert than a snack.

Easy Step-By-Step Oreo Caramel Granola Bars:

Ingredients:

  • 1½ cups granola (any kind—rolled oats-based works best)
  • 8–10 Oreo cookies (roughly crushed)
  • ½ cup caramel sauce (store-bought or homemade)
  • ¼ cup honey or maple syrup
  • 2 tbsp unsalted butter
  • ¼ tsp salt
  • ½ cup chopped dark or milk chocolate
  • Extra crushed Oreos and chocolate drizzle for topping

Method:

Step 1: Prepare the Base

Take a large mixing bowl and start by combining granola with crushed Oreo cookies. Mix well until the texture starts to look like wet sand.

Step 2: Make the Binder

Heat up a small saucepan on low heat and add caramel sauce, honey, butter and salt to it. If making a vegan version, replace honey with maple syrup. Stir it until everything is well combined and turned into a smooth mixture. This will take 2 to 3 minutes. Once done, remove from heat.

Step 3: Combine Wet and Dry

Add the warm caramel mixture to the granola-Oreo mix. Stir it quickly while it is hot to combine thoroughly. Make sure all the dry ingredients are well coated with the caramel mixture. Add chocolate chunks after the mixture has cooled down slightly. Fold the chocolate chunks slowly until it is evenly distributed.

Step 4: Set the Bars

Take a square baking dish and line it with parchment paper. Pour the mixture in the dish and spread out by pressing firmly with a spatula. You can also use greased hands for better pressing or you can put another piece of parchment paper on top and press it down with another baking sheet of the same size.

Step 5: Chill and Set

Sprinkle some extra crushed Oreo cookies on top and press slightly so it sticks to the granola bar layer. This will bring an extra crunch and chocolatey flavor in the bars. Drizzle melted chocolate in geometric patterns and refrigerate the bars for 1 to 2 hours until it is firm. Leave it in the fridge for more time until you get the desired firmness.

Step 6: Slice and Enjoy

Once the bar is set, remove from the dish and slice into small bite sized squares or rectangles. Store it in an airtight container in the fridge to enjoy it for up to a week.
