Ingredients:
- 1½ cups all-purpose flour or gluten free flour
- ½ tsp baking soda
- 1 tsp baking powder
- ¼ tsp salt
- ½ tsp cinnamon
- 2–3 medium overripe bananas, mashed
- ½ cup refined oil or melted butter
- ½ cup brown sugar or jaggery powder (for deep, caramel-like sweetness)
- 1 tsp vanilla essence
- 100g Dairy Milk chocolate, chopped into chunks
- 1 tbsp flour to coat chocolate to prevent it from sinking
- ½ cup fresh curd or yogurt for eggless version
Method:
Step 1: Prepare
Set the oven to 180°C (350°F). Grease and line one 8x4 inch loaf tin with parchment paper or oil greasing and flour dusting.
Step 2: Mix Dry Ingredients
Take a large mixing bowl and in it sift together the flour, baking powder, baking soda and salt. Add cinnamon, nutmeg, and cardamom powder if you like a warming and floral flavor.
Step 3: Mix Wet Ingredients
Take a different bowl and add peeled bananas into it. Mash it with the help of a fork. Once mashed, add sugar, oil or butter, and curd into it. Curd is a perfect substitute for eggs because it brings moisture to the bread while also making it light and comforting. Add a few drops of vanilla extract and mix until well combined.
Step 4: Combine & Fold

After baking, keep the tin at room temperature before removing the banana bread, then transfer the bread on a wire rack to cool completely.
