Lotus biscoff is a type of spiced shortcrust biscuit that is flavored with the subtle notes of cinnamon, nutmeg, and brown sugar. It is served alongside coffee in Europe and can also be used to make multiple desserts with a crumb. The term “Biscoff” refers to a blend of “coffee” and “busicuit” which is beautifully portrayed in the Lotus biscoff biscuits. The recipe is divided into two parts — baked and no-bake versions. The ingredients are the same for both but the only difference is the process. Lotus Biscoff Oreo Cheesecake Recipe: Baked And No-Bake Versions:
Ingredients:
For the Base:
- 100 g Oreo biscuits (without cream)
- 100 g Lotus Biscoff biscuits
- 5 tbsp melted butter
For the Cream Cheese Filling:
- 400 g cream cheese (room temperature)
- 200 ml whipping cream
- 100 g powdered sugar
- 1 tsp vanilla extract
- 3 tbsp Lotus Biscoff spread
- 3 tbsp crushed Oreos
Optional Topping:
- 2 tbsp melted Biscoff spread
- Extra Biscoff & Oreo pieces for garnish
Baked Version:
Step 1: Prepare the Base
Crush Oreo and Biscoff biscuits into fine crumbs using a food processor. Combine it with melted butter and press firmly into a springform pan. Chill in the fridge while you prepare the filling.
Step 2: Make the Cream Cheese Mixture
Take a bowl and in it beat cream cheese, sugar, and vanilla extract together until smooth and fluffy.Take a separate bowl and whip cream in it until you see stiff peaks form. Fold the whipped cream into the cream cheese mixture. Once well combined, fold in crushed Oreo cookies.
Step 3: Assemble and Bake
Pour the filling over the chilled base. Tap the pan on the table to remove air bubbles. Bake at 160°C (320°F) for 40–45 minutes in a preheated oven until the edges are set but the center is slightly jiggly.
Step 4: Cool and Chill
Let it cool at room temperature, then refrigerate for at least 6 hours or overnight.
Step 5: Add Toppings & Serve
Drizzle melted Biscoff spread on top, decorate with biscuit pieces, and serve chilled.
No-Bake Version:
Step 1: Prepare the Base
Same as the baked version—mix crushed Oreo + Biscoff with melted butter and press into pan. Chill in the fridge for 15–20 minutes.
Step 2: Make the Filling
Blend cream cheese, sugar, vanilla, and Biscoff spread. Whip cream separately and fold in. Mix in crushed Oreos.
Step 3: Assemble and Set
Pour the filling over the base, level the surface, and refrigerate for at least 8 hours or overnight to set firmly.
Step 4: Decorate & Serve
Once set, top it off with melted Biscoff drizzle and crushed biscuits. Slice and serve chilled.
Tips to make Lotus Biscoff Oreo Cheesecake perfect:
- For the Baked Version, use a water bath to prevent the crumb from cracking. Wrap the pan in foil and place in a larger tray filled with hot water.
- For the No-Bake Version, make sure all ingredients are cold while whipping cream for the best stability.
- Don’t skip chilling time when making a no-baked version. Overnight chilling is ideal for perfect structure.
