1. Oatmeal Cookies with Dairy Milk Chocolate Chunks
Ingredients:
- 1 cup old-fashioned rolled oats or quick oats
- 3/4 cup all-purpose flour
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp ground cinnamon, optional
- 1/4 cup coconut oil, melted
- 1/3 cup honey
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup Dairy Milk chocolate, chopped
Method:
- Preheat the oven to 180°C, and line a baking sheet with parchment paper. Set aside.
- Take a big mixing bowl, combine the dry ingredients: rolled oats, whole wheat flour, baking soda, salt, and cinnamon. Stir well to evenly distribute.
- In a separate medium bowl, whisk the wet ingredients at one go: melted coconut oil, maple syrup or honey, egg, and vanilla extract.
- Pour the wet mixture into the dry ingredients. Use a spatula or wooden spoon to stir until a dough forms. It may feel sticky at first, that’s normal.
- Gently fold in the chopped Dairy Milk chocolate. Make sure the chocolate is evenly distributed throughout the dough.
- Use a tablespoon or cookie scoop to drop rounded spoonfuls of dough onto the baking sheet. Flatten each one slightly with your fingers or the back of a spoon.
- Bake for 10 to 12 minutes, or until the edges are lightly golden. The centers may still feel soft; they’ll firm up as they cool.
- Let the cookies cool on the tray for 5 minutes before transferring to a wire rack.
2. No-Bake Chocolate Oatmeal Coconut Cookies
Ingredients:
- 1 1/2 cups rolled oats
- 1/2 cup unsweetened shredded coconut
- 1/2 cup peanut butter
- 1/4 cup honey
- 1/2 tsp vanilla extract
- Pinch of salt
- 1/2 cup Dairy Milk chocolate, chopped
Method:
- Take a medium saucepan and over low heat, warm the peanut butter and honey. Stir continuously until the mixture is smooth and warm, about 2 to 3 minutes.
- Remove the pan from the heat and stir in the vanilla extract and a pinch of salt.
- Immediately add the rolled oats and shredded coconut, mixing until everything is well coated. The mixture should be thick but workable.
- Allow the mixture to cool for about 5-10 minutes. This prevents the chocolate from melting completely.
- Once slightly cooled, fold in the chopped Dairy Milk chocolate. You’ll get beautiful little chocolatey pockets in every bite.
- Use a spoon or small cookie scoop to form balls or drop spoonfuls onto a parchment-lined tray. Press lightly with your fingers to shape them into disks if preferred.
- Refrigerate the cookies for at least 30 minutes, or until they’re firm enough to hold their shape.
3. Vegan Banana Oat Cookies with Vegan Milk Chocolate
Ingredients:
- 1 large ripe banana (about 1/2 cup mashed)
- 1 cup rolled oats
- 1/4 cup oat flour or almond flour
- 1/2 tsp ground cinnamon
- 1/4 tsp baking powder
- 1/2 tsp vanilla extract
- 1/3 cup vegan milk chocolate, chopped
Method:
- Preheat the oven to 180°C and line a baking sheet with parchment paper.
- Take a medium-sized mixing bowl, mash the ripe banana until smooth. You should have about 1/2 cup once mashed.
- Stir in the vanilla extract and cinnamon.
- Add the rolled oats, oat (or almond) flour, and baking powder, and mix well until a soft dough forms.
- Fold in the chopped vegan milk chocolate, making sure the chocolate is spread throughout.
- Let the dough sit for 5 minutes. This helps the oats absorb some moisture.
- Use a tablespoon to drop spoonfuls of the dough onto the prepared baking sheet. Flatten slightly with the back of the spoon or your fingers.
- Bake for 10 to 12 minutes, or until the cookies are set and slightly golden underneath.
