Recipe For Dairy Milk Silk Chocolate Granola Date Bars:
Ingredients:
Base:
- 1½ cups rolled oats
- 1 cup Medjool dates, pitted (soak in warm water for 10 minutes if dry)
- ½ cup raw almonds or walnuts
- ¼ cup peanut butter or almond butter (natural, unsweetened)
- 2 tablespoons chia seeds or ground flaxseeds
- 1 tablespoon coconut oil
- A pinch of sea salt
Chocolate Topping:
- ½ cup Dairy Milk Silk chocolate
- 1 tablespoon coconut cream or almond milk
- 1 teaspoon maple syrup or honey
Method:
Step 1: Prepare the Base
Blend pitted dates in a food processor until it becomes a thick paste. Add oats nuts, seeds, nut butter and salt to it and pulse until the mixture becomes crumbly yet sticky enough to hold up together. Add a splash of water or more nut butter if you want to make it gooey and help blend more easily. You can leave a few nuts and seeds to add later if you like to enjoy them whole for a crunch.
Step 2: Shape and Set
Line a square baking pan with parchment paper. Press the mixture firmly into the pan in an even layer and refrigerate for about 20 to 30 minutes to set it until firm.
Step 3: Make the Chocolate Topping
Melt chocolate with coconut cream and almond milk using a double boiler method. Stir it until chocolate is dissolved. Add maple syrup or honey if you want to make it sweeter.
Step 4: Finish and Chill
Pour the melted chocolate over the chilled granola base and spread evenly. Place it back in the fridge for 1 to 2 hours until chocolate is completely set.
Step 5: Cut and Store
Slice the set base into bars and store in an airtight container. Wrap in a parchment paper wrapper to take with you anywhere. The bars will remain fresh for up to 10 days so you can create large batches to last for the entire week. You can also prepare these bars as a gift for your friends and family and you can also pack it up for your kids lunch.
