Dark Chocolate Bark with Cranberries & Almonds Recipe

Ingredients

  • 4 Cups of high-quality dark chocolate
  • 1.5 cups of roasted almonds
  • ¾ cups of dried cranberries (craisins)

Dark Chocolate Bark with Cranberries & Almonds: Step-by-Step Guide

Preheat the oven to 180 °C. Take whole almonds and roast them on a sheet tray until they are visibly browner. Allow them to cool down

Take a small handful of craisins and almonds. Roughly chop and set aside.

Prepare a rectangular flat baking tray with baking paper, and set aside.

Next, melt the dark chocolate slowly over a double broiler on very low heat. Keep stirring. Or, you can microwave the chocolate at 50 percent power for 30-second intervals, until it is smooth. To infuse the rich, luscious flavor of chocolate, it is recommended to use fine-quality dark chocolate. Chocolate chips are not really recommended as they don’t melt very smoothly.

Once the chocolate melts completely, spread the melted chocolate out across the paper-lined tray.

Quickly add the roasted almonds and chopped cranberries to the chocolate base. To achieve that nutty, crunchy texture, it is best to use whole roasted almonds, which infuse a stronger flavour than regular almonds, and therefore are perfect for this recipe. Finely chopped dried cranberries are an absolute tastemaker for this dessert.

Place the almond and chocolate bark into the fridge to set completely.

Once set, remove from the fridge and place the chocolate bark onto a chopping board. Cut into shards with a sharp knife.

This

dark chocolate bark with cranberries and almonds can be stored at room temperature for about 5-7 days. However, storing it in an airtight container in the fridge is ideal.

Dark Chocolate Bark with Cranberries & Almonds: Tips & Tricks

Make sure you use a fine-quality chocolate. Avoid chocolate chips. They are not ideal for this dessert as they tend to hold their shape and therefore don't melt smoothly.

Good quality roasted almonds are imperative for that nuttier and richer flavor than raw, unroasted almonds. Whole almonds are better to use for that nutty consistency than flaked almonds.

Allow the bark to chill in the fridge for at least 1 hour before cutting into shards or pieces with a sharp flat knife.
