Ingredients:
Dry Ingredients:
1 cup (125g) all-purpose flour
¼ cup (25g) cocoa powder (unsweetened)
2 tbsp granulated sugar
1 tsp baking powder
½ tsp baking soda
Pinch of salt
Wet Ingredients:
1 large egg
1 cup (240ml) milk (dairy or almond milk)
2 tbsp melted butter (plus extra for cooking)
1 tsp vanilla extract
Mix-ins & Toppings:
⅓ cup chopped roasted almonds
⅓ cup dark chocolate chips
½ cup Warm maple syrup
Method:
Step 1: Mix dry ingredients
Take a medium mixing bowl and combine flour, cocoa powder, powdered sugar, baking powder, baking soda, and salt in it. Sift everything together for a smoother texture.
Step 2: Mix Wet Ingredients
Take another bowl and combine egg, milk, melted butter, and vanilla extract in it. Whisk until it becomes smooth and homogenous.
Step 3: Combine wet and dry ingredients
Slowly pour the wet mixture into the dry ingredients, stirring gently until everything is combined well. Even if there are a few lumps it is just fine. Avoid overmixing the batter.
Step 4:
Once the batter is mixed, fold in the roasted almonds and chocolate chips. Make sure every almond and chocolate chip is evenly coated in the batter. You can reserve a few almonds for garnishing.
Step 5: Cook the pancakes
Heat a non-stick skillet or a pan over medium heat. Add a little butter and let it melt. Spread the butter evenly throughout the pan. Pour ¼ cup of pancake batter into the pan and cook until you start to see bubbles on the top. This will take about 2 minutes. After that, flip the pancake and cook on the other side for 1 to 2 minutes until the pancake is thoroughly cooked from inside.
Step 3: Warm the maple syrup
Warm up the maple syrup in a saucepan on low heat to make it runny and fragrant. Make sure to not boil it, you only need it runny for the pancake drizzle. It is also fine if you want to keep maple syrup thick and use it as it is.
Step 4: Serve
Stack up the pancakes, sprinkle a few extra almonds on top, and drizzle generously with the prepared warm maple syrup. Add a dusting of cocoa powder or a dollop of whipped cream to create a stylish presentation and bring a creaminess into the pancakes.
